    I’ve been having a lot of conversations with clients that need help with creating VIP experiences on tighter budgets. Sound familiar? I’m going to share some strategies for “smart luxury” so you can create more of those win-win premium experiences while keeping you on-budget and driving the results you want! But first…I love this quote: “Luxury means just giving more; hospitality means being more thoughtful”. Powerful, huh? But what does that mean? Example #1: Rather than spending $100 more on caviar for every attendee, investing in an “event concierge” who will sending a personalized email to every attendee before a special dinner to ask them if they have any special requests, share with them who they can expect to meet, the format, how much you’re looking forward to making personalized intros to them...  Why does this work? If you take the time to invest in getting to know your attendees and showing you’re invested in their personal experience, they are more likely to show up, be engaged, remember to take the action you want them to take after the event. Example 2: Rather than providing fancy but generic gifts, do a little time “researching” guests and personalize a welcome amenity to set the tone for the event. I once bought-out a hotel for an event, and they sent up a “blind tasting” wine experience to my room when I arrived since I had recently passed the Court Master Sommelier exam. They had researched that about me. It was so fun to have a playful moment where I got to taste wine and guess what they had selected for me (it was a Robert Sinsky pinot gris and yes, I still remember 10 years later because it was so personalized and unique!) Why does this work? That bottle of wine cost them roughly $30, but the thoughtfulness that they put into covering the bottle, printing out a blind tasting test from the Court master sommelier site, and delivering it with some nuts/olives and a fun note made such an impact on me, I’ve shared this story so many times! They could have instead sent up a $150 bottle of champagne, but I probably wouldn’t have opened it and also probably wouldn’t have remembered it from all the other bottles of champagne I’ve received. Fancier isn’t always better and thoughtfulness counts! Example 3: Listen and respond. I was once managing a Google Executive event and I noticed in our event app’s chat one attendee was complaining that he was really craving his afternoon Diet Coke fix. So I went to the nearest vending machine, and bought one to hand deliver to him. That Google client was so surprised/delighted that we had delivered what he was craving in the moment, that he booked a meeting with our SVP afterwards, and we closed a major deal! Hospitality is about making your guests comfortable, anticipating their needs, and then delivering a personalized and delightful experience. It can involve luxurious treats, but doesn’t need to. All it takes is time, intentionality and good old fashioned hospitality.

    Let me tell you how I handled a function for 320 people, for three days straight. We delivered first and second tea breaks, lunch, and dinner across all three days. That’s multiple service points, back-to-back execution, and zero room for error. But here’s the beauty of it, there was no repetition of meals across the six major service sessions. Every experience came with variety, intention, and a touch of creativity. This is where people management and creativity come into play. A successful function is not just about food, it’s about coordination, energy, and delivering a lively, memorable experience with your team. Here are some key tips to consider before setting a menu as a chef: 1. Understand your audience Know the kind of guests you are catering for, are they corporate, international, or local? This determines the direction of your menu and the overall dining experience. 2. Design for experience, not just feeding Food is not just to satisfy hunger; it’s to create moments. Think variety, balance, and how each meal feels different from the last. 3. Plan for variety and avoid repetition Especially for multi-day events, your creativity must stretch. Guests should always feel like they are experiencing something new. 4. Build and trust your team Execution at this level is never a one-man job. A well-trained team that understands standards and brings their own expertise is everything. I’m proud of my team, we showed up, delivered, and brought excellence to every plate. When you truly understand your guests’ preferences, you can design menus that don’t just suit them, but impress them. Kudos to every man and woman wearing this jacket. Recently we had the pleasure of curating an intimate experience at Sofitel Mumbai BKC for Coracao Do Vale, celebrating olive oil not simply as an ingredient, but as heritage, flavour, and a way of gathering people around the table. With a beautifully crafted food by Chef Mazen Abdallah who had flown down from the Sofitel The Obelix Dubai to do a festival at Sofitel BKC, the warmth and hospitality of the team at Sofitel BKC was greatly appreciated, the evening brought together guests from different spheres—food, culture, business, and the arts for a shared experience over exceptional food and conversation. Special thanks to Chef Vividh, Richard, and the entire team who took care of every tiny detail so thoughtfully and effortlessly. A few things that make a curated food experience successful for both the venue and the brand: • A clear narrative – every experience needs a story. Guests should understand why they are there, what they are tasting, and what makes it meaningful. • A menu with intention – food should reflect the brand’s values while still feeling generous, delicious, and memorable. • The right guest mix – bringing together people from different worlds often creates the most engaging conversations and lasting connections. • Attention to detail – table styling, service, pacing, music, lighting, and flow all shape how the evening is remembered. • Collaboration with the venue , when the venue team and client work as one, the experience feels seamless and natural. • Value for the brand – guests should leave with an emotional connection to the product or story being shared. • Value for the venue the venue should gain visibility, goodwill, and a stronger relationship with a community that may return beyond the event itself.     Luxury Is Not About Truffle Oil and Gold Leaf. I remember sitting in culinary school when a chef said this in passing. No big speech. No dramatic pause. Just a line thrown into the middle of a class. But it stayed. Because at that time, like most of us, I thought luxury meant expensive ingredients, complicated techniques, and plates that looked like they belonged in a gallery. Over time, I realised how wrong that was. Somewhere along the way, luxury in food got reduced to a garnish. A drizzle of truffle oil. A sheet of gold leaf. A menu filled with imported ingredients no one can pronounce. And suddenly, it’s “premium.” Let’s be honest. That’s not luxury. That’s insecurity, plated. Because real luxury doesn’t shout. It doesn’t need validation from ingredients. It’s built on control. It’s reading the room, the lighting, the flow of service, the emotional energy of the event. And then engineering an experience so seamless that no one notices how hard it is. Luxury is: ✨Service sequencing calibrated to guest flow. No table waits, no awkward gaps, no kitchen panic ✨Lighting designed for food perception. Not just ambience, but colour accuracy, depth, and appetite appeal ✨Menu engineering based on consumption psychology. Knowing exactly what guests will eat, when, and how much. (Yes, that’s a thing!) ✨ Table styling that supports the food. Plateware, cutlery, linen, height, all working with the cuisine, not against it.
